Observed hand wash sink next to three compartment sink used to hold dishes. Discussed with operator hand sinks are only for handwashing to prevent and reduce cross contamination. Operator removed dishes.

Code 06, Food properly thawed: Observed 4 packs of raw tuna fish in Commercially processed reduced oxygen packaged fish bearing a label indicating that it is to remain frozen until time of use.
Raw tuna is still partially frozen and operator has made a large cut in every bag. Discussed with operator raw fish must be completely removed from vacuum sealed environment once the thawing process begins.
