    • Intermediate: No written procedures available for use of time as a public health control to hold time/temperature control for safety food. For pizza on front counter area. Pizza properly time marked. Inspector provided a digital copy of Time as a public health control form.
  • Dishwashing facilities and test kits
    • Intermediate: No chemical test kit provided when using sanitizer at three-compartment sink/warewashing machine or wiping cloths. For quaternary ammonium, employee got some.
    • Basic: Old labels stuck to food containers after cleaning. In use lids with old stickers, employee removed lid to triple sink.
