Conditions were a danger to public health, so the business was ordered to close immediately. It can't reopen until an inspector confirms the problems are fixed.
- Approved source; food safe and unadulterated
- High priority: Dented/rusted cans present. See stop sale. Observed 2 rusted tomatillo sauce cans and five dented and rusted creamy mushroom sauce cans on rack at kitchen area, operator discarded during inspection.
- Food out of temperature
- High priority: Time/temperature control for safety food cold held at greater than 41°F. Observed hush puppies mix (58°F - Cold Holding) in reach in cooler across fryer, as per operator less than 1 hour due preparation, operator moved to walk in cooler for rapid cooling. Also observed Buffet line: potato salad(46°F - Cold Holding); chicken salad (45°F - Cold Holding); coleslaw (45°F - Cold Holding); cut melon (46°F - Cold Holding) as per opera less than 2 hours, operator moved to walk in cooler and add ice for rapid cooling.
- High priority: Time/temperature control for safety food, other than whole meat roast, hot held at less than 135°F. Observed baked potatoes (128°F - Hot Holding) on standing unit at kitchen area, as per operator less than 1 hour, operator proceed to reheated.
