Conditions were a danger to public health, so the business was ordered to close immediately. It can't reopen until an inspector confirms the problems are fixed.

    • Intermediate: Ready-to-eat, time/temperature control for safety food prepared onsite and held more than 24 hours not properly date marked. Observed for prepped conch in walk in cooler not date marked. As per operator from the day prior.
  • Food out of temperature
    • High priority: Time/temperature control for safety food, other than whole meat roast, hot held at less than 135°F. Observed at cook line table fried chicken (101°F - Hot Holding). As per operator less than 30 minutes. Operator placed into cooler to cool.
  • Food properly thawed
    • Basic: Time/temperature control for safety food thawed in an improper manner. Observed frozen conch at prep sink in standing water. Operator turned on water to properly thaw.

    • Basic: Stored food not covered. Observed at reach in cooler containers of tilapia, shrimp and conch fritters stored uncovered. Observed at dry storage shelf bucket of dry seasoning stored uncovered.
    • Basic: Food stored on floor. Observed at kitchen area 3 plastic gallons of hot sauce and a case of water stored on floor. Operator removed.

Observed at water heater closet 8 live roaches crawling out of door frame. Observed at dry storage area 4 live roaches crawling on walls and shelves where flour bags are stored. Observed 1 live roach crawling out of box of parchment paper used to wrap food items. Observed 1 live roach crawling from under gyro machine at cook line. Observed 1 live roach crawling on lid of reach in cooler flip top.
