• Food out of temperature
  • Intermediate: Food being cooled by nonapproved method as evidenced by inadequate rate of cooling during time of inspection. Observed hot food in ziploc bags on prep table fully closed. Inspector spoke with person in charge and bags were opened and put in walk-in cooler.
• Clean equipment storage and air drying
  • Basic: Silverware/utensils/plates dried with a towel/cloth. Observed employee wiping clean plates with cloth towel. Inspector spoke with employee.
• Employee personal belongings
  • Basic: Employee personal items stored in or above a food preparation area, food, clean equipment and utensils, or single-service items. Employee cellphone on bottom shelf of prep table with thermometers and other kitchen utensils. Employee moved cellphone.
