    • High priority: Time/temperature control for safety food cold held at greater than 41°F. flip top; fish egg (49°F - Cold Holding) operator states out of temperature for approximately 2 hours. Operator moved to reach in to quick chill. Items not prepared or portioned today.

    • High priority: Raw animal food stored over or with ready-to-eat food in a freezer - not all products commercially packaged. Raw beef stored over cooked calamari in two door reach in freezer. Operator moved and stored properly
    • High priority: Raw animal food stored over/not properly separated from ready-to-eat food. Raw fish stored over wonton wrappers, and noodles in two door reach in cooler. Operator corrected and stored properly.

Commercially processed reduced oxygen packaged fish bearing a label indicating that it is to remain frozen until time of use no longer frozen and not removed from reduced oxygen package. At double door reach in cooler: commercially processed reduced oxygen packaged raw tuna bearing a label indicating that it is to remain frozen until time of use no longer frozen, thawing in vacuum package overnight.
