Must wash, rinse and sanitize all dishware, equipment and utensils in three-compartment sink until dishmachine is functioning properly. Operator not currently using dish machine. Per operator, waiting on part to fix dish machine. Operator sanitizing via triple sink with quaternary sanitizer.
