Not prepared or portioned today. Stored in unit less than four hours per operator. Operator moved to walk in cooler to rapid chill to 41°F or below.
    • High priority: Time/temperature control for safety food, other than whole meat roast, hot held at less than 135°F. Observed plate of Baked potatoes (97°F - Hot Holding) under no temperature control at food prep table next to cookline. Cooked less than three hours ago per operator. Operator discarded.
